Preparation and cooking
Prepare the Ligurian spelt soup by leaving it to soak for 12 hours and, if possible, changing the water about every 3 hours. Drain it and cook it in salted water for 2 hours after boiling. Enjoy hot with a drizzle of EVO oil.
