Preparation and cooking
Prepare the Borlotti beans by leaving them to soak for 12 hours and, if possible, changing the water about every 3 hours. Drain them and cook them in salted water for 1 hour after boiling. Once drained, they are ready to be enjoyed!

Creamy Bean Soup
Ingredients for 3/4 persons:
half bag of Borlotti Beans (175 g), 2 cloves of garlic, 1 sprig of rosemary, salt, pepper and EVO oil
cook Borlotti beans for 1 hour in salted water and rosemary. Brown garlic and rosemary in 2 tbsp oil. Blend beans with 2 to 3 ladles of cooking water. When oil has seasoned, remove garlic and rosemary, add puree, adjust density with cooking water. Heat for a few minutes, add salt and pepper, and serve with a little oil.
