Preparation and cooking
Prepare the whole broad beans by leaving them to soak for 12 hours and, if possible, changing the water every 3 hours. Drain and cook in salted water for about 40/60 minutes from boiling. Once drained, use them to prepare your favourite recipes!

Whole fava broad beans and millet soup
Ingredients for 4 people: 350g dried broad beans, 1 potato, 1 onion, 2 carrots, 1 celery stalk, 100g millet, 2L Cerreto Organic vegetable broth, Herbs and Spices Cerreto Organic ( laurel, thyme, hot pepper to taste), olive oil, Parmesan cheese, salt and pepper to taste.
Preparation: soak the broad beans for 12 hours. Prepare a chopped mixture of celery, carrots, onion and fry with 2 tablespoons of oil and the flavours. Add the soaked and drained broad beans and cook with the hot broth for 90 minutes. Blend half of the soup in a blender. Peel and cut the potato and add to the soup. Cook on a low heat for 15 minutes. Add the millet and cook, stirring occasionally. Add broth to taste. Serve with salt, pepper, raw oil and Parmesan cheese.
