UseSoya is a well-known legume, rich in protein and with many beneficial properties. You can use it to prepare fragrant veg burgers or delicious soups, but yellow soya can also be prepared in salads with crunchy fresh vegetables to bring a triumph of colour and well-being to the table!
Preparation and cooking
Prepare the yellow soybeans by leaving them to soak for 12 hours and, if possible, changing the water about every 3 hours. Drain and cook in salted water for 2 hours after boiling. Once drained, it is ready to be used!

Yellow soya meatballs
Ingredients for 4 people:
200 g yellow soya, 2 carrots, 1/4 white onion, salt, parsley, black pepper, EVO oil.
cook and drain the soya. Finely chop the onion and fry it in 2 tablespoons of oil. Cut the carrot into julienne strips and add to the onion. Cook for 5 minutes, add the cooked soya and toss with salt, parsley and pepper for 5 minutes. Leave to cool and blend. Shape the meatballs, leave to rest for 30 minutes in the fridge and bake in the oven at 200° for 15 minutes or fry in plenty of seed oil."
